I wish they made cupcakes WITHOUT the frosting...
taking off the frosting becomes very tedious work, and then it makes the actual consumption of the cupcake less enjoyable because I had to do all this work!

the coolest cupcakes i ever made were with strawberry soda and they turned out pink and had a strawberry taste to them.  they were boom! and i've also made boston creme cupcakes which have pudding in them and those were so boom too.  but my specialty- devils food!! and i have to say, cupcakes are way more convenient than cake because you don't need a plate or fork.   hooray for cupcakes!!!

do you still have the recipe for those?  my daughter's birthday is next Thursday and she is WAY into (a) cupcakes and (b) pink (Pinkalicious is her favorite book), so it would be fun to make those for her (we usually just use pink food coloring).  boston cream: yummmmm biggrin

yeah, i'll look for it. and it's way easy since you can just use a box of cakemix.

I had a nutrition professor in college who used to claim that Twinkies were (potentially) healthier than apples because they can theoretically be fortified with all essential amino acids, antioxidants, and a full RDA of trace minerals, vitamins, etc., whereas apples only come as they are :).

anyone ever had fried Twinkies at the fair?

 it's actually from a betty crocker book i got at the grocery store and it has all these really cute dessert ideas.  and i found the recipe online:

Strawberry and Cream Cupcakes

1box Betty Crocker® SuperMoist® white cake mix
1 1/4cups strawberry-flavored soda pop
Vegetable oil and egg whites called for on cake mix box
Red food color
1container (1 lb) Betty Crocker® Rich & Creamy® cream cheese frosting
1/2cup Betty Crocker® white candy sprinkles
Fresh strawberries, if desired

1. Heat oven to 350°F (325°F for dark or nonstick pans). Place paper baking cup in each of 24 regular-size muffin cups. Make and bake cake mix as directed on box for 24 cupcakes, substituting soda pop for the water and using oil and egg whites. Cool in pan 10 minutes; remove from pan to cooling rack. Cool completely, about 30 minutes

2. Stir 1 or 2 drops food color into frosting. Frost cupcakes.

3. In small resealable food-storage plastic bag, place sprinkles and 1 drop food color; seal bag. Gently shake and massage sprinkles until mixture is various shades of pink; sprinkle around edges of frosted cupcakes. Garnish with fresh strawberries.
